A Toast to Mom: Celebrate Mother’s Day with Paso Robles Wine
Why Paso Robles?
Paso Robles is a California wine region centrally located between San Francisco and Los Angeles along California’s Central Coast. According to Paso Robles Wine Country Alliance, it is California’s fastest-growing wine region and largest geographic appellation. The territory encompasses over 40,000 vineyard acres and more than 200 wineries. Paso Robles is known for its red from Cabernet Sauvignon and Merlot to Syrah, among other grapes.
Linne Calodo Level Headed 2019
This wine tells a unique story since the estate grapes are grown just 10 miles from the ocean and on a slope that welcomes the varying morning and afternoon sun exposures. The vineyard is treated with attention to the details in conjunction with nature, including adding mulching and grazing 48 heads of sheep. In addition, the grapes undergo a meticulous harvesting process. After fermentation, the Grenache was pressed into a 2,700-liter concrete tank and topped with Syrah. The blend was racked to a 3,000-liter French Oak Foudre for maturation the following April. Total aging is 36 months, thus providing a unique structure and significant layers that could only come from this extended aging treatment.
This wine’s bold and flavorful characteristics make it an elegant choice for celebrating Mother’s Day. It is 97% Grenache and 3% Syrah presenting aromas and flavors of cooked raspberries and strawberries with notes of sage, dried rose petals, and, on the finish – cinnamon. It has a full body; alcohol is medium plus and balanced by medium tannins and acidity. Linne Calodo Level Headed 2019 was drinking beautifully now and could extend in the cellar for 3-5 years. Pairing ranges from grilled meats, mushrooms, and anything earthy or umami.
For instance, our partner Cynthia and her family will enjoy Linne Calodo Level Headed 2019. They will do so with food from the grill, including salmon, steaks, rosemary pork loin, mushrooms, and vegetables. When grilling, they coat the mushrooms and vegetables with balsamic vinegar for extra bite, and when examined, the sweetness sears and begs to be paired with big, bold reds like Linne Calodo Level Headed 2019.
Take your time, and savor this elegant wine that could only come from Paso Robles and Linne Calodo, Matt Trevisan, Owner and Winemaker.
